Is there any way to add some sort of user identification in the device event log in the SmartThings app for who performed the action? This would be nice when sharing panels.

Interesting idea, Brian...
I'm pretty sure a SmartApp (i.e., the "ActionTiles (Connect)" SmartApp) cannot write directly to the device event log / "Recently" Feed for a specific Thing; and the Notifications - Messages, or Notifications - Activity Feed aren't the right place either.
I think the best we can think of is to make this a special feature of ActionTiles's someday Event History feature. ActionTiles could likely write special messages there ... since we're likely to keep our own log or portion of it.
